I believe the first reaction of most people when seeing a fire is to throw water on it. In some cases, yes...that will stop the fire, but when kitchen 'oil' is involved, do NOT use water.
As the saying goes....water and oil do not mix. Remember that if while cooking, a fire erupts when frying with oil. The oil may overflow the pan or splatter, causing it to ignite. The thing to do: Smother the fire.
